Fried chicken wings with fish sauce

Stage 1Pre-process raw materials

  • Chop shallots, garlic, ginger and chili, then put them separately.
  • Slice the lemongrass.
  • Chicken wings: wash them with salt, remember to clean the skin carefully, then wash them with water and dry them. Marinate the wings with ½ spoon of seasoning, the chopped shallot, garlic, ginger, chili in 10-20 minutes.

Stage 2:  Prepare a fishing sauce mixture for the chicken’s skin, including 1 spoon of sugar, 2 spoons of fishing sauce, 2 spoons of water.

Stage 3: Put the pan on the stove, add some cooking oil covering all the chicken wings. Wait for the oil to become hot, then put all the chicken wings to the pan. Remember to turn every side of the wings.

Tips: Before taking out the chicken wings, you should turn up the heat so that the oil from the chicken wings will come out. Turn off the stove after putting out the chicken.

Stage 4: Put the pan on the stove and add some cooking oil. When the oil turns hot, put in and stir shallots, garlic and ginger. Afterwards, put in and stir the fishing sauce mixture in the pan until the mixture becomes thickened, then add lemongrass. Finally, put all the fried chicken wings into this mixture and stir them well.

Pumpkin broth with peanuts

Stage 1: Prepare

  • Chop the shallots.
  • Marinate the minced lean with one teaspoon of chopped shallot, ½ teaspoon of pepper, 1 spoon of seasoning and ½ teaspoon of sugar.
  • Peanuts: wash and dip them in the water for blooming. When cooking, the peanuts will get soft quickly.
  • The pumpkin: peel and cut it into pieces.

Stage 2: Put the pot of water on the stove. When the water boils, put crushed peanuts and the minced lean to the pot, then add one teaspoon of seasoning. Cook it in 15 minutes for peanuts getting soft. Remember to use a ladle to skim the foam.

Tip: Crushed peanut will get cooked more quickly and contain more fats for the broth.

Stage 3: Add all pumpkin pieces and cook them in 10 more minutes. You should add ½ teaspoon of fishing sauce and turn off the heat.

Stirred beef with asparagus

Stage 1: Prepare

  • Wash the asparagus with the saltwater, then cut them into pieces.
  • Wash the beef, cut it into small pieces, then marinate them with the chopped garlic and shallot, soy sauce, oyster oil, pepper.
  • Put the ice to the bucket, add some more water.

Stage 2: Boil the asparagus

  • Add some water and salt to the pot for boiling. When the water boils, put the asparagus to the pot and then take it out to place in the bucket. After that, take it out for drying.

Tip: Put the asparagus into the ice bucket to keep its crispness and fresh green.

Stage 3: Stir the beef

  • Put the cooking oil to the heated pan. When the oil becomes hot, add and stir the chopped garlic and shallot in the pan. Then put the marinated beef to the pan. Remember to cook it with the big heat to avoid it getting tough.

Stage 4: Put the asparagus and then the stirred beef on a plate. Sprinkle some pepper for a good smell.
